Woww it has been a whirlwind weekend! I took a half day Friday to fly down to Savannah, GA for a college friend/sorority sister’s wedding and got back laaate last night. Yall I had the best freaking time. I forgot how friendly everyone in the south is, I also forgot that just because I’m with college friends does NOT mean I can drink like I’m in college (sidenote: warm weather + sunshine + NO OPEN CONTAINER LAW = happy girl). And the wedding! OMG! The bride did it all herself and it was all perfect- I’ll have a recap up for this week’s Friday Favorites of the best budget-friendly/DIY elements of the wedding. Today’s recipe is one of my go-to busy night recipes. It’s easy to chop up the veggies on my Sunday meal prep night and can just throw everything in a pan and cook it up. It also makes great leftover lunch! Ingredients: 6 oz steak (I buy whatever kind of steak is on sale, this time I used NY Strip) 1 red bell pepper, sliced 1 yellow bell pepper, sliced 1 zucchini, chopped ½ white onion, diced 1 clove garlic, minced Heat a non-stick pan over high heat. Season the steak with 1 teaspoon garlic powder, 1 teaspoon sea salt, and 1 teaspoon black pepper, and optional steak sauce. Place the steak on the heated pan and let it cook, uncovered, for about 2-3 minutes on each side (sidenote from Harrison: to ensure your steak cooks evenly on each side, when you flip the steak let it cook on a different part of the pan). Once the steak is cooked to your liking (I like mine pretty much mooing- just me?) remove it from the heat and allow to cool for a few minutes. Turn the stove heat down to medium. Chop the steak into small cubes. Add the peppers and onion to the frying pan and let cook about 2 minutes. Add the garlic and zucchini, and cook with the other veggies stirring constantly. After about 5 minutes, add the steak cubes and mix together well, allowing the veggies and steak to cook for another minute or two. Add any sauces and a side salad and enjoy!
